Beef jerky is a thin
cut meat into a flake that is trimmed in fat, flavored with sour, salty or
sweet sauce with dried over low heat or salted and dried. The result is a salty
and half-sweet meat that does not need to be stored in the refrigerator. Jerky
is an example of preserved food.
Beef jerky recipes
usually use one type of meat only, namely beef. However, jerky can be made from
other meats such as goats or pigs. Can also jerky made from the game such as
venison, elk, caribou, and deer. Currently, there are also jerky from turkey,
ostrich, salmon, crocodile, and tuna. Meat should be dried quickly, to slow the
growth of bacteria right then and there. To do so, the meat is cut thin, or
pressed thin.
