Bean Sprouts Fried is a tasty Indonesian vegetarian dish made
with sauteed bean sprouts (green bean sprouts) with a little hot water, plus
slices of tofu, ketupat or lontong and yellow noodles, watered with savory
gravy or gravy made from oncom. Tauge goreng is a typical food city of Bogor,
West Java, Indonesia. Usually served as street food peddled using a pikulan or
wagon by street vendors. This food is one of street food dishes popular in
Indonesia, especially in Jabodetabek, including Jakarta, Bogor, Depok,
Tangerang, and Bekasi.

Bean Sprouts Fried is a vegetarian food, because this dish does
not contain any animal elements. The main ingredients are bean sprouts, or
green bean sprouts. Usually these green bean sprouts are cooked directly in the
presence of the buyer immediately after ordering, using a simple stove.
Technically, this bean sprouts are not fried with oil,
but are sauteed with little water, or rather boiled with a little hot water.
Then the tofu slices, yellow noodles, and sliced lettuce or lontong are added, pan-fried with water and
heated together. Then the ingredients that have been cooked and heated is
watered with a thick sauce tasty salted-flavor made from oncom. This thick
oncom sauce is made by stir-frying oncom that has been crushed using an ulekan
or pounder, pan-fried with a little cooking oil, and added spices, including
galangal, onion, bay leaf, tomato slices, green onion, chives, and tauco (pasta
fermented soy beans), sweet soy sauce, lime juice, and salt
How To Make Fried Toge
Materials / spices:
- 100 grams of bean sprouts, washed, brewed
- 1 piece of tofu, fried
- 2 pieces of lontong / ketupat, cut into pieces
- 100 grams of yellow noodles, brewed
- 10 sticks of chives, cut 3 cm
- 100 gram oncom, cut box
- 4 tablespoons of sweet taoco
- 2 tablespoons of sweet soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon granulated sugar
- 300 ml of water
- 1 tablespoon oil for sauteing
Ground spices:
- 5 onions
- 5 pieces of red chili
- 2 pieces of cayenne pepper
How to Process:
- Heat the oil. Saute the finer spices and sweet taoco until fragrant. Enter oncom. Stir well.
- Add sweet soy sauce. Stir well. Enter water, salt, and sugar. Cook until boiling.
- Serve sprouts, tofu, lontong, and noodles sprinkled with sauce. Sprinkle chives.
